Shepherd's Pie with Ground Turkey

I have to thank my roomie, Alyssa, for this idea. It's a delicious and slightly healthier recipe for Shepherd's Pie! I love it because it's fairly simple to make, and I can make at least three meals out of it! It's also only about 375 calories per serving and very filling.

Ground Turkey Shepherd's Pie
Makes 4 servings

Ingredients
1 pound ground turkey
1 can peas and carrots
1 medium yellow onion, chopped
1 pack Idahoan Butter & Herb flavored potato flakes
1 packet Pioneer Woman French Dip au jus
2 Tbsp olive oil

Directions

Heat olive oil in a large skillet over medium heat. Pre-heat oven to 375 degrees.

Brown ground turkey until almost cooked through. Add chopped onion and French Dip au jus. Stir well and cook an additional five to seven minutes.

Meanwhile, prepare mashed potatoes. (I used the microwave method.) Instructions are on the packet.

Transfer the turkey and onion mixture to a 9 x 13 baking dish. Spread the peas and carrots evenly over the turkey. Spread the prepared mashed potatoes over the top evenly. Bake in the oven for 15 to 20 minutes, until the potatoes are lightly browned.
